Our Meats

Wild meat is naturally low in fat. The birds and beasts that we harvest have not been fattened by artificial additives neither do they just sit around waiting to be slaughtered. These remarkable creatures have to work for their food and only eat what they need to survive. This makes for meat with fantastic flavour and texture, that when cooked correctly, results in wonderful dishes from a natural source.

Venison

With all the bad press around regarding traditional farmed red meat, venison is an extremely healthy alternative, having half the fat content of beef and more protein than most meats.

Nearly all of our venison is shot locally in Hertfordshire or Bedfordshire by professional deer stalkers. Any meat that comes into our approved larder will be tagged to enable us to track where it came from and who it was shot by, giving you piece of mind that we have full tracability over everything we sell.

Obviously not every deer species can be stalked all year due to breedings seasons, so we will sometimes have Roe deer meat for sale. But don't worry, the same standards apply no matter where they come from.

Game birds

All our game birds come from local farms or estates that run shoots for extra income.

The birds can be cooked whole or jointed if preferred.

With pheasants being in such abundence during the season, burgers and sausages are a must for the regular game eater.


Wood Pigeon

With approximately 5 million Wood Pigeon in this country, they can cause a lot of damage to crops. Luckily this little bird has beautifully flavoured meat and when cooked quickly on a high heat, it retains it's moisture. Fantastic as a canape, starter or on a healthy salad for lunch.


The Rest

Whilst the meat above make up a large part of what we sell, there are other meats like rabbit, hare or wild duck that we also have available at certain times of the year.
